Minum Meals: meals that require as few ingredients as possible but are amazingly delicious. I am not much of a cook. None of these recipes are going to be groundbreaking. What I am more concerned about is having a collection of recipes that won't take an entire evening to make. I understand that some people love spending hours in the kitchen and I truly applaud you. Every time I try it usually turns out too mushy or too salty or simply bland as hell. Then I'm left with a pile of dishes and a literal bad taste in my mouth. So minum meals are for those of us who just want to get in, get out, and get something delicious while we're at it. First up: Shrimp Tacos
Let me preface this by saying that Mexican food is the most amazing food on the planet and I am not claiming to be able to make anything close to what you'll find from someone who knows what they're doing. THAT BEING SAID: tacos are frickin delicious, whether you know what you're doing or not.
This recipe is great because it's simple and can be easily modified based on your spice preference and preference of toppings and additions.
I usually go for cooked frozen shrimp because they often go on sale and I like knowing they're cooked all the way through so there's less likelihood of me completely messing it up. They also keep for a long time. If you have access to fresh shrimp and want to give it a go, please be my guest. It would probably really increase the quality of the overall end product.
For the tortilla I usually go with a locally made corn tortilla. If you live in Minneapolis check out La Perla in Mercado Central on Lake and Bloomington. Store-bought works too but they're never as fresh and delicious. If you're going for more of a tex-mex feel, flour tortillas work as well!
All of the ingredients can be tweaked based on your flavor preferences. More or less red onion, more cilantro, more lime, additions of radish or avocado, more spice or less. The world is your oyster (shrimp taco?)!
Minum Meals: Shrimp Tacos
Makes: 2 tacos
Total cook time: 15 minutes
6-8 fully cooked shrimps, frozen
1 T olive oil
1/2 to 1 cup of your favorite salsa (depending on how saucy you want it)
Chili powder
Garlic powder
Cumin
Fresh ground pepper
(to taste)
1/4 cup red onion, diced
2 corn tortillas
Optional additions:
cilantro
lime
radish
queso fresco
avocado
1) Soak shrimpies in warm water for 30 seconds and then pinch and twist all the tails off.
2) Heat olive oil in a saute pan and throw the shrimpies in. Let cook for 1-2 minutes
3) Add salsa and let simmer for a minute. Then add spices.
4) Put the tortillas in the microwave with a damp paper towel on top of approx. 30 seconds (you can also put the tortillas in the oven for a minute but look I'm lazy)
4) Back to the shrimpies: You can add red onion now and let it simmer for a minute or two or if you want to keep the flavor intense, save the red onion raw for later.
5) Once the salsa has cooked down to a slightly thicker sauce, remove from heat.
6) Arrange 3-4 shrimpies on each tortilla and add the sauce on top. Add red onion and any other toppings you desire. Enjoy!
